Breaking Down the Federal Tag and Understanding what Surveyors are Looking For
Overview:
This session will provide attendees with a thorough review of federal tag 812 – Food Procurement. Rachel Landmark, surveyor and registered dietician will educate on the different components of this regulation. She will review form CMS-20055: Kitchen Observation Pathway and will discuss other frequently cited food service tags.

Presenter: Rachel Landmark, MS, RD, LN, Surveyor, SD DOH
Rachel Landmark is a registered dietitian and surveyor with the Department of Health. Originally from Marshall, MN, she fostered a passion for food and nutrition through her experiences in restaurants and food service. She earned her undergraduate degree at South Dakota State University (Go Jacks!) and graduated with Honors College Distinction in 2018. She went on to earn her master’s degree in nutrition at Concordia College in Moorhead, MN. Rachel returned to South Dakota in 2020 to start her career in long term care in Yankton, SD. Rachel joined the Department of Health in 2022 and has been advocating for the health and safety of South Dakotans ever since. She is passionate about education and outreach.
